Ingredients:

  • 12 oz (340g) spaghetti or linguine
  • 1 lb (450g) large shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/4 tsp red pepper flakes (optional, for heat)
  • 1/2 cup (120ml) white wine (optional, or use chicken broth)
  • 1/2 cup (120ml) chicken broth
  • 1 lemon, zested and juiced
  • 1/4 cup (15g) fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste
  • Freshly grated Parmesan cheese (optional, for serving)

Instructions:

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil.
    • Add the pasta and cook according to the package instructions until al dente. Reserve about 1 cup of pasta cooking water before draining.
  2. Cook the Shrimp:

    • While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
    • Add the shrimp and cook for about 2-3 minutes per side, or until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
  3. Prepare the Sauce:

    • In the same skillet, add the remaining olive oil over medium heat.
